Happy Monday, my darlings, 

I was surprised to be back from vacation... So much work, so many things to take care of, so many people to meet etc... It was crazy in July, and I thought it was going to calm down, but it didn't... But I'm back, rested and ready to go again, I love the expression "strike while the iron's hot", it speaks to me... I hope you're enjoying your vacations and that you're wiggling your 10 fingers as you should, I'm preparing some "I've got time, it's the vacations" DIYs for you, but if you read between the lines, they're more like ambitious DIYs. But today I'm looking after your taste buds... 

So, to keep in line with my refreshing, icy style, I'm proposing a surprising little recipe for goat's cheese ice cream, to be served as a starter, or why not instead of dessert... The cheese addict who lives with me is asking for more...

 

ICE-CHEESE-RECIPE-MAKE-MY-LEMONADE

 

To make this recipe, you'll need (for two people):

  • 4 large handfuls of baby spinach,
  • 50 g cherries, 
  • 1 small jar sun-dried tomatoes,
  • 125g goat's cheese or ricotta, 
  • 5cl whipping cream,
  • 5cl water,
  • 10g sugar,
  • 2 tbsp lemon juice.

 To begin, bring the water and sugar to the boil in a saucepan. Once the mixture comes to the boil, take it off the heat and pour it into your blender with the fresh goat's cheese and whipping cream. Blend for about 1 minute, until the mixture is as smooth as possible. Leave the mixture to cool in the fridge for around 1 hour. Then unhook your ice-cream maker, pour the mixture into it and leave to turbinate for 15/20 minutes. Reserve your ice cream in the freezer.

To prepare the plates, first clean your baby spinach, place it in a salad bowl, cut the cherries in half, remove the stones and add them to the baby spinach. Finally, cut the sun-dried tomatoes into strips. I've found my perfect mix: harissa (one tablespoon) + olive oil (4 tablespoons) + raspberry vinegar (2 tablespoons + two drops of soy sauce for salt). Enjoy!
