Serves 6
-Shortcrust pastry
-8 large apples (including 3 apples for the compote)
- 3 tablespoons brown sugar
- 1 sachet vanilla sugar
- A mandolin, especially a mandolin
Step 1: The compote:
Wash, peel and cut 3 apples into small pieces. In a saucepan with a little water, add the apples, vanilla sugar and brown sugar. If you like, you can add cinnamon at this point. Leave to stew for 10/15 minutes over medium heat, stirring regularly of course. Then blend the compote in a blender until smooth, to serve as a cement base for your roses. Leave to cool. Once the compote has cooled, place your shortcrust or puff pastry, as you prefer, in a pie dish, pricking the base with a fork. Spread the compote evenly over the entire surface of the dish.
Step 2: The roses!
I'm not going to lie to you, it's a bit of a pain the first time, but the second time, it's less of a hassle. boring but just as time-consuming, so you have to be patient, but it's going to be sublime! Using an apple corer, remove the core from the 5 apples, but above all leave the skin on, as this is what will hold the petals in place. Using your beloved mandolin, cut thin slices of apple. I'd advise you to cut them in 2, as it'll be easier, at least that's how I did it... Now that you've got your apple half-circles, we can get down to business. Gently roll the first half-circle in your fingers, fairly tightly, to create the rose "bud", then repeat the operation, less tightly, with the other half-circles, so that your famous half-circles become the petals of your roses. Once you've made your rose, place it on the compote bed, pressing it down lightly so that it doesn't move. Repeat with all the apples (1 apple = approx. 5 roses).
Once you've made your bouquet, place it in the oven for 30 minutes at 180°C (tip: before placing in the oven, dust lightly with powdered sugar for a glossy, sexy, yummi effect).
