LIEGE WAFFLES AND MATCHA CHA CHA

I hope you had a lovely weekend... Today I'm sharing a recipe for Liège waffles with matcha tea. I don't know if you remember, but a while back I was telling you about a great restaurant in the Loire Valley... IBAJIand I tasted its black sesame waffles, the most delirious thing in the world because they're so good, ex-aequo with iced mochis on my kiffe scale. For the benefit of non-parisians and those who don't feel like waiting hours for a seat in this restaurant, I wanted to try and find a recipe that would come as close as possible. Well, you know what, I scoured rue Sainte-Anne, the "Paris Store" and other Asian grocery stores in the 3rd, 1st and 19th arrondissements, without success, there's a shortage of black sesame in Paris, well in the east of Paris, as I didn't have the courage to go to the 13th arrondissement. Perhaps at Tang Frères but still, I was disgusted. And since I have my fixations in life, I said to myself: never mind the black sesame, I'll make some with matcha tea... Well, it was terribly better! With a little vanilla whipped cream, it's the perfect snack, or an idea to vary your breakfast...
Serves 6 (2 waffles each)
- - 500g flour
- - 2 pinches of salt
- - 4 eggs
- - 42g fresh baker's yeast (a small packet)
- - 20 cl milk + 1 tablespoon caster sugar
- - 1 heaped tablespoon matcha tea
- - 250g melted half-salt butter
- - 250g pearl sugar
- - 1 sachet vanilla sugar
This recipe is very simple, you just need to be patient between stages, to give the dough time to rest and rise... Start by melting the fresh yeast in the 20cl warm milk with the caster sugar. Meanwhile, place the flour in a large bowl, make a well and gently add the diluted yeast, butter and 4 egg yolks (reserve the whites). Mix well, kneading the dough for at least 5 min. Once the dough is smooth, cover the bowl with a damp cloth and leave to rise for 30 minutes. Once this time has elapsed, beat the egg whites until stiff with a pinch of salt. In a small bowl, mix together the matcha tea, sugar pearls and vanilla sugar and add this colored powder to the dough, mixing well, then gently fold in the egg whites. Take the damp cloth and cover the mixture for a further 30 minutes. Patience, patience. Heat your waffle iron and place a heaping tablespoon of batter on each plate. Cook your waffles for around 2 minutes. Cool on a wire rack and enjoy!
