 Hello my little cats! 

It makes me smile to write you this, it's become the running gag of my life "my little cats", "my little chestnuts" whenever I meet one of my mates or when I come in or out of the office, there's always someone to say "hello little cats"... It makes me smile, it's kind and always funny. Anyway, back to today's topic... it's almost cocktail hour, and if you're at the office in July like I am, cocktail hour in the middle of summer is sacred! And I don't know if you remember, but I was telling you a while back - we can speak in years now - to make ends meet, I was working with Scott S. from Dirty Dick, and at the time he was officiating at L'U.F..O and I was learning to make mojitos under his benevolent guidance... It was a crazy time and crazy evenings, and as I'm not a night person, around midnight I had to make superhuman efforts not to yawn in front of the customers! In short, the most fun I had was making mojitos! And when the sun came out, we'd make strawberry, mango and kiwi mojitos, which were more of a smoothie than a cocktail, but so good, fresh, fruity and just the right amount of intoxicating. So today, I'd like to give you a recipe for a Princess Mojito... Enjoy and don't overdo it!

To make this mojito, you'll need:

  • - 6 cl Cuban rum
  • - 4 lime wedges
  • - 2 yellow lemon slices
  • - 2 cl liquid sugar
  • - 1 tbsp brown sugar
  • - 2 sprigs mint
  • - a few raspberries, strawberries
  • - lemonade or any sparkling water
  • -and a few ice cubes

And for decoration:

  • - a raspberry
  • - a strawberry
  • - a candied cherry
  • - a small bunch of redcurrants
  • - a small bunch of mint

For this recipe, you don't need a shaker, or a pillon, it's really a homemade mojito, super système D. Let me explain. You can make this recipe right in the glass. Start by cutting the lime into quarters, squeeze 4 quarters into the glass, add a few quartered strawberries, a few raspberries, some liquid sugar and the brown sugar. Take the mint and strike it in the palm of your hand to release the aromas, detach the leaves from the stem and place them in the glass. Take a tablespoon, fold it in half like when you were a little rebel, and use it like a spoon to crush the fruit. Still using your spoon, break the ice into small pieces and fill the glass two-thirds full, adding the rum. Top up with sparkling water or lemonade and stir vigorously with a spoon. Now for the garnish: put the fruit on a small wooden spike, wedge the bunch of mint and the bunch of redcurrants into the glass and TA-DA! Enjoy! And for the non-alcoholic version, follow all the above steps without adding the rum, and adding raspberries and lemonade!
