TWENTY PEAS GLUTEN-FREE BREAD RECIPE
Good evening my sweet kittens!
Today I'm here to talk about food! Because, as you probably know, along with the venue, catering is the second most important part of your wedding! Feeding all the people you love with little dishes that reflect you... And it wasn't easy to find the pearls! My boyfriend is a fine gourmet and cooks extremely well, so the bar was high. I also didn't want a sit-down meal, where our guests spend the whole evening waiting for their food, and I think it's hard to find a creative caterer who can provide everything from appetizer to dessert, served hot and on the plate at the same time... I wanted something good and fun, with flavors we love...
Thanks to Aurélie, our wedding planner who recommended the great Claire and Jérôme, restaurants Twenty peas ! What a discovery, and I think they understood perfectly what we were looking for: little things to eat with your fingertips, in small portions, so that we could taste almost everything without exploding! And we figured that the average age of the party was around 35/40 and that it would be great to have a burger bar... With beef, chicken, pork and veggie burgers, and gluten-free buns for everyone. As well as being a terrible phenomenon, I can assure you that a gluten-free bun is much easier to digest, and you're up and running in no time for a second one! The format of the burgers was perfect: not too big and not too tiny, gourmet just right... All served with sweet potato fries with paprika and lime or parsnip fries with parmesan...
Chez Twenty peasthey don't just do burgers. In their 2 restaurants, they offer an ephemeral menu, which changes according to inspiration and daily arrivals of their ultra-fresh produce. I highly recommend them for a healthy lunch or ultra-creative catering for your events!
To give you an idea, in addition to the burgers, they've made us some small starters:
- green tomato, mascarpone, basil and pistachio focaccia,
- burrata with mild garlic parsley, avocado velouté, feta and pecans,
- zucchini patties with parmesan,
- mini Jerusalem artichoke, pecan and rosemary financiers, and more...
and for dessert, in addition to our pièce montée, we had..:
- Twenty Peas cheesecake with homemade jam ("mourrance"...)
- chocolate-orange polenta cake,
- blackberry and pistachio financier,
- and later that evening, the waffle machine went into full swing!
And how adorable they are at Twenty peas they give you the recipe for their bun bread (with or without gluten), which you can bake at home in the family oven - no bread machine required!
Burger buns recipe for a dozen buns:
- - 680g T55 flour or rice flour (gluten-free)
- - 2 tablespoons organic baker's yeast (in solid form)
- - 4 tablespoons sugar
- - 2 tablespoons salt
- - 50 g melted butter
- - 150 g water
- - 200 g milk
- - 4 egg yolks
*EDIT*:Start by preheating your oven to 220°C. In a small bowl, melt the solid yeast in a little milk. Mix all the dry ingredients in a bowl. Then add the yeast dissolved in the milk. Start kneading by hand or with the blade of your food processor, gradually adding the egg yolks. then add the butter and water and continue kneading. Add the rest of the milk, kneading until the dough is smooth. Leave to cool completely, then place the dough in an oiled bowl covered with a damp cloth for 1h30. At the end of this time, form about ten small balls which will become your buns, and leave them to rise for a further 1h. In a small bowl, mix a little milk and a little egg yolk together (if you have any left over from the previous steps, that's fine, but without egg yolk it works too) and, using a silicone brush, brush over your little buns and bake for 10 to 12 minutes! And enjoy!
