Happy Monday, chestnuts!

You could say that it's super cold, that winter is here, that the micro down jacket is in position under the coat and that your iphones don't work anymore because your fingers are so "captain iglootized". But here's the good news! Look on the bright side, exotic fruits are out and about, overflowing the shelves of your beloved Monoprix, so to put some sunshine in your mouth and extend my Thai vacation (I'll be reporting back in a few weeks, rest assured!), here's a remastered mango with coconut milk and glutinous rice... It's a super-easy recipe that's ready in just 10 minutes, perfect for an impromptu dessert, a quick snack or a gourmet breakfast. Plug in the rice cooker and turn up the radiator, and the tropics are at your fingertips in your 3-square-meter kitchen.

To make this "mango with glutinous rice", you'll need the following for 4 people:

  • 170g glutinous rice,
  • 20cl water,
  • 20cl coconut milk,
  • 3 tablespoons caster sugar,
  • 2 small mangoes,
  • 1 brick leaf,
  • mango ice cream,
  • and for decoration, mint and mango coulis...

First of all, put the coconut milk, water, rice and sugar in your rice cooker, mix a little and start the machine: minimum difficulty, maximum pleasure, you'll see. While your rice is cooking, peel the mangoes and cut them into small pieces to make a sort of fruit tartar. Now it's time for the crunchy part of your dessert. Using a pastry ring (which you'll use later to dress the cake), cut out circles from your sheet of brick (you'll need two per person). Once you've obtained your brick circles, place them on a baking sheet lined with parchment paper. Bake in a hot oven (180°C) under the broiler for just 2 minutes. Take out the bricks and leave to cool. 

Normally I hear the rice cooker ringing, so take out your plates and arrange your desserts with the famous pastry ring. Start by filling your circle with the glutinous rice, pressing it down well, then gently place a brick chip on top, followed by your mango tartare, the second brick chip and a scoop of passion fruit, mango or even lemon ice cream on top. If the ice cream is homemade, it's great, otherwise Monsieur Picard does it very well... And enjoy!

Tip: "I'll make you a dessert in 3 minutes, but I'm a big star chef": Fill a syringe (found in a chemist's, no needles, eh?) with mango coulis and form tiny peas on your plate, a few mint leaves, and M6 is just waiting for you. Sweet kisses.
