Hola !!!!

3-day weekends are so much fun! Here's my lunch for the day! Immediately photographed, immediately eaten and immediately posted... And here is the first savory recipe on this blog, a big step, I promised you a light recipe, here it is! It's such a great little recipe, and it's all I could eat right now, the weather's so nice and the call of light skirts is unbearable... Now that the sun's out, it's time to take on those twirling thighs, so for me it's diet or almost... Because salad's okay, but with dripping bits of cheese inside, and fresh raspberries! I almost feel like making another one as I write this! Enjoy!


To make this salad for 2 people, you'll need..:

  • 5 large handfuls of spinach shoots,
  • 1 punnet of raspberries,
  • 1 st Marcellin cheese,
  • 1 bunch coriander, basil and mint,
  • 2 eggs.
To begin, clean the spinach shoots and chop the bunches of mint, basil and coriander very finely, using a pair of scissors or a chopper. Mix them all together in a bowl, add the raspberries, dice the St Marcellin cheese and add it too. As for seasoning, you can add salt, pepper and a drizzle of olive oil and balsamic vinegar. But the best is to make a small vinaigrette with honey mustard. Mix 3 tablespoons olive oil, 2 tablespoons balsamic vinegar and 1 tablespoon honey mustard.
